Cooking for two when I learned how to cook for a family of 11 has its challenges. It’s a good thing I enjoy browsing the Internet for solutions because I was introduced to this wonderful idea of muffin tin cooking.
I sprayed the tins, placed a refrigerated biscuit in each and stretched the dough to the top. Next I placed a mixture of frozen vegetables, chopped baked chicken and condensed chicken soup in each tin, baking according to the biscuit package directions. Not only were they tasty but the presentation was so colorful, not to mention just how very simple, easy and affordable this meal was.
