Ingredients
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon pepper
2 cups thinly sliced Honey Crisp apples
2 cups sliced celery
1/2 cup loosely packed fresh flat-leaf parsley
1/3 cup sliced red onion (I use considerably less.)
Instructions
Combine first 4 ingredients. Add apple and remaining ingredients; toss.
Serves 6.
