Pecans or walnuts, chopped
Red grapes or cherries cut in half
Feta cheese (crumbled)
Pears or apples
1/4 cup mayonnaise (Not Miracle Whip)
1/4 cup PURE maple syrup
3 Tablespoons champagne vinegar or white rice wine vinegar
2 Teaspoons sugar
1/4 cup vegetable or olive oil
Whisk mayonnaise, maple syrup, vinegar and sugar in medium bowl to blend. Gradually whisk in oil until mixture thickens slightly. Season to taste with salt & pepper. Dressing can be prepared 3 days in advance. Cover and refrigerate. Re-whisk before serving.
Toss washed and dried salad greens, apples, grapes or/and pears or cherries and 1/4 cup nuts in a bowl. Top with dressing and feta cheese.
