Mix together with a large spoon or fork until well blended:
1 Egg
3 Tablespoons Mayonnaise
4 Teaspoons Lemon Juice
1/8 Teaspoon Red Pepper Flakes
1 Teaspoon Tarragon (or Dill Seeds or Dill Weed)
1 Tablespoon Finely Chopped Onion
1 Teaspoon Old Bay Seasoning
8 Ounces Crab Meat
1/2 Cup Crackers
Melt 1 Tablespoon Butter in Skillet. Cook Crab Cakes 5 to 6 Minutes Per Side on Medium Heat.
Serve with tossed green salad, green vegetable or coleslaw and a baguette.
