Ingredients
- 1 cup fresh mushrooms sliced
- 1/4 cup carrots, sliced
- 1 tablespoon oil (olive)
- 1 garlic clove, minced
- 1 cup rotisserie chicken, shredded
- 2 cups fresh spinach
- 1 (3-oz) package Top Ramen Chicken Flavor
- 2 tablespoons heavy cream
- 1 green onion, chopped
- 1 teaspoon sesame seeds
Directions
- In a large skillet over medium heat, sauté mushrooms and carrots in oil for 3-4 minutes until soft.
- Stir in garlic, chicken and spinach.
- Cook an additional 1-2 minutes until spinach wilts.
- Prepare Top Ramen according to package instructions. Separate the broth from the noodles; set aside and keep warm.
- Add the cooked noodles to the sautéed vegetables and chicken in the skillet.
- Pour in the heavy cream; toss to combine.
- Divide the mixture between 2 bowls.
- Pour 1 cup of broth into each bowl.
- Garnish with green onions and sesame seeds.
- Serve hot.
