Ingredients
- 4-ounces cream cheese, room temperature
- 1/2 cup grated sharp cheddar cheese
- 6 large jalapenos, halved and seeded
- Coarse salt + ground pepper
Directions
- Preheat oven to 450 degrees
- In a small bowl, mix together the cream cheese and cheddar cheese
- Season with salt and pepper
- With small spoon, fill each jalapeno with about 1 T. cheese mixture
- Place peppers on a parchment lined baking sheet and bake until cheese is browned and bubbling, about 10 minutes, rotating sheet 1/2 way through the baking process

** I often melt a tablespoon of butter and mix it with Panko crumbs. Sprinkle crumbs over the stuffed peppers before baking. It gives a bit of a crunch to the peppers.
