Lasagna Cups

Lasagna Cups for Tonight or Later, Easily Frozen



1/3 C. browned meat (pork, turkey or beef)

Salt and pepper

24 wonton wrappers, usually found in produce area of grocery store

1 3/4 C. Parmesan Cheese *Reserve 3/4 C. Parmesan and 3/4 C. Mozzarella for top of each cup

1 3/4 C. Mozzarella Cheese

3/4 C. Ricotta Cheese

1 jar of your favorite marinara sauce

Basil or dried Italian seasoning

Pre-heat oven to 375 degrees and grease muffin tins.

Brown the meat and season with salt and pepper to taste. Add marina sauce and simmer. (You may want to add onions and/or garlic for more flavor.)

Press one wonton into each muffin tin. Gently pat into bottom and on sides of tin.

Place Parmesan, ricotta and mozzarella cheese in each cup.  Top with meat and pasta sauce.

Repeat layers again. Top with Parmesan and mozzarella cheese.

Bake 16-20 minutes or until the edges brown. Remove from oven and let cool 5 minutes. Use knife, if needed to loosen edges. Garnish with basil and/or Italian seasoning and serve with crusty bread and tossed green salad.

Cut wonton wrappers into 2 1/4 circles using either a biscuit cutter or drinking glass top. Place this on top of meat sauce. Sprinkle cheese on top of circle wrapper and bake as usual.
