Courtney’s Aronia Berry Pancakes
- 1 cup flour
- 1 cup milk
- 1 egg, beaten
- 2 T. sugar
- 2 T. oil
- 2 T. baking powder
- 1/4 tsp salt
- 1/2 tsp vanilla
- Dash of cinnamon
Mix together all ingredients, alternating wet with dry. Do not over mix the batter. Gently stir in 1/2 cup (or more) of fresh Aronia berries. Cook on griddle or on pan on stove top. Top the pancakes with your favorite syrup or jam.
