Ingredients
- 1 Tbsp. olive oil
- 6 green onions, thinly chopped
- 2 Tbsp. minced garlic
- 1 tsp. cumin
- 1¼ cups low-sodium vegetable broth
- 1 cup couscous
- 1 large tomato, finely diced
- ¼ cup fresh cilantro, chopped
- 1 jalapeño pepper, finely chopped
- Juice of 1 lemon
- ½ cup pine nuts, toasted
Directions
- Heat oil in a saucepan. Add green onions, garlic, and cumin. Cook until fragrant (1 minute).
- Add broth and bring to a boil. Remove from heat, stir in couscous, and cover. Let set until couscous is soft (10 minutes).
- Toss couscous with all ingredients except pine nuts. Sprinkle with toasted pine nuts to serve. [I omit the pine nuts.]
